WThis is a simplified take on a drink found on a new menu. Designed as a large-volume pre-mixed which is loaded with the flavours of the holiday season, rendering it excellent for your holiday party. Any leftover syrup for morning drinks, sweets, or for additional servings of this cocktail.
Bikini Recipe
Serves 10 guests
For the Clementine Syrup (yields 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g caster sugar
Ingredients for the Drink (makes 850ml, enough for 10)
400ml decent vodka
100ml classic gin
150ml peach schnapps
200ml clementine cordial (from the recipe above)
A few cranberries, for garnish
Mandarin essential oil, for finishing
Directions
Making the Cordial: Combine every items into a pot, heat until it reaches a gentle boil, mixing to dissolve. After that, turn off the heat and leave to cool down completely. Decant into a clean bottle, close it and refrigerate it chilled, where it will keep for up to one month.
For the Batch Mix: Combine every liquid ingredients into a sizeable container, let it rest for one hour, then pass it through , ideally through muslin, so it's perfectly clear.
For serving: Pour 85ml of your cocktail base into your stirring glass packed with ice, and agitate carefully for about 60 seconds to cool it down. Filter into an frosted cocktail glass or equivalent, top with some cranberries adding the final touch with a quick spritz of the essential oil over the drink.
